My grandma Agnes was born on today’s date, 99 years ago. (Just did the math as I was typing that — wow.)
She passed away on her husband’s birthday in 1992, at 79 years old. I was only 5 years old at the time, and certainly had not had enough time with my grandmother. So often, I wonder about how different my life would be if I had only had a few more years with her…or...

Vegetable and Garbanzo Curry
from “Slow Cooker Favorites Made Healthy”
Prep: 15 minutes / Cook: Low 5 hours, High 2.5 hours (I recommend high for 2.5 hours; the veggies got mushy when I cooked it on low for longer)
Makes: 4-6 servings
3 cups cauliflower florets
1 cup frozen cut green beans (I omit these…not a big fan of green beans!)
1 cup sliced carrots (2 medium)
